Chicken Fried Rice

A great use for leftover chicken and/or rice!


1 Cup Long-Grain Rice

2 Cups Water

1 Cup Diced Cooked Chicken

Frozen Veggies, or diced up broccoli, peppers, etc.


Cook rice according to package directions

While rice is cooking through, prepare chicken and veggies

On medium heat in a skillet, throw in a little sesame oil and cook veggies

Add chicken

Add cooked rice

Sprinkle with a little sesame oil and soy sauce (use Trader Joe’s sweet chili sauce for a sweeter/spicier fried rice)

Salt to taste

Mix together and serve!
