Chicken & Veggie Caesar Wraps

Chicken & Veggie Caesar Wraps are an easy dinner option--but be sure to make extras because you will want these for lunch the next day! Delicious warm out of the oven yet just as tasty cold and "on the go," using already cooked and prepared ingredients, make these a snap to put together.


  • Costco Skewered Mediterranean Style Cooked Chicken (4 skewers, diced)

  • 5-6 Costco Tortillas (softest and most similar to restaurant-quality--you won't even miss Chipotle...)

  • Broccoli Slaw or other shredded vegetable mix (2-3 cups or 1/2 small package)

  • Caesar Dressing (1/4 cup for mixing; 1 tbsp per Wrap)

  • Fresh Spinach

  • Fresh Parmesan Cheese

  • Salt & Pepper (to taste)


Remove chicken from wooden skewers and dice into bite-sized pieces. Place chicken into bowl, adding veggies, and then mixing in Caesar Dressing.

Preheat oven to 350-degrees.

Assembly: Take a tortilla wrap and spread approximately 1 tbsp Caesar Dressing to lightly coat all around. Next add the chicken and veggies in a small straight line, along the right side of the tortilla (from top to bottom, leaving 1/2" on each end). Sprinkle Parmesan Cheese over mixture. Place 3-4 Spinach leaves on top of that. Sprinkle with salt and pepper, to taste. To roll up, start at the bottom and roll and tuck until your wrap is fully complete. Place seam side down (so contents don't spill out) on a sprayed baking sheet. Repeat until mixture is gone.

Heat in oven for approximately :10 minutes, or until tortillas look cooked through (and not burnt!).

You're going to want two for a meal. Serve with french fries, chips, fruit. Individually wrap each wrap in foil and enjoy for the next several days.
