Mashed Potato & Cheese Quesadilla (aka Mexican Potato Knish)

For anyone who has had Potato Knishes, these are not those! But it's a tortilla filled with mashed potatoes...and cheese. Pretty yummy. I buy a couple scoops of freshly prepared mashed potatoes at one of our favorite grocery stores (Byerly's). Or used leftovers. Heat them up for a few seconds in the microwave to make it easier to spread on the tortilla.


Ingredients:

Tortilla

Creamy Mashed Potatoes

Shredded 4-Cheese Blend

Adobo Seasoning


Heat tortilla on one side. Flip and lightly season with Adobo Seasoning (if available). Spread layer of Mashed Potatoes around entire tortilla. Sprinkle with shredded cheese. Fold in half. Flip tortilla back and forth to brown on each sides. Takes only a few minutes from start to eating! For extra nutrition, add fresh spinach.
